The Chef

Chef Charles Pearce, after attending the French-style Culinary Academy in Eastbourne, immediately begins climbing his way up the gastro ladder in renowned gourmet pubs and restaurants and at just 19 years old he works as a chef and personal chef of VIPs.

Curious about discovering other culinary realities and wanting to learn new techniques of preparation, he begins to travel through Italy and United States. he stops in San Francisco where he picks up the American street food gourmet art , developing special techniques of smoking and molecular cooking.

Back then in Italy and decides to start the "Tom" adventure, a new opening restaurant, which seems to sum up all of his previous culinary experiences.

Just after one year, when he’s 23, he’s chosen to lead the kitchen of "tom., The Ordinary Market".

In the summer of 2017 he participates in the international competition held annually at Carloforte, the "Girotonno", where he is invited to represent Britain for the first time in the history of the festival.

The Chef deals now with consultancy at restaurants and food and beverage companies and he’s the co-founder of a high-level event company, CJPFood, with the aim to spread knowledge of Italian cuisine to foreigners and to let Italians know the true international culinary culture.
